Ingredients:

Cooking process:

1. Pre-clean and wash the potatoes. Be sure to cook with the old one because it contains more starch. We cut it into four parts, pour in water and put it on the fire to cook until fully cooked.

2. Peel the onion and chop it into small pieces.

3. Wash the champignons thoroughly and cut into small cubes.

4. Place a frying pan on the fire, add vegetable oil and fry until golden brown.

5. Then add the mushrooms to the onions and simmer over low heat until all the liquid from the mushrooms has evaporated.

7. When the potatoes are cooked, drain all the water and mash.

12. Roll the potato pie in breadcrumbs.

  • minced meat (I use pork) 500 g
  • chicken eggs 4 pcs.
  • onion 150 g
  • loaf 100 g
  • milk 200 ml
  • vegetable oil 3 tbsp.
  • chopped greens 1 tbsp.
  • salt 2 pinches

Preparation

    First of all, boil 3 eggs and soak the loaf pieces in milk; you can grind the loaf into crumbs in a blender in advance or chop it after soaking.

    Cut the onion into large cubes (about 1 cm).

    Boiled eggs need to be cooled and cut into cubes the same size as the onion.

    In a frying pan with vegetable oil, fry the onion until translucent and add a tablespoon of chopped herbs, I used frozen parsley.

    Stir in the onions and herbs and continue frying for another 1-2 minutes.

    Combine chopped eggs, fried onions and herbs in a bowl, add salt to taste and stir.

    To prevent the zrazy from opening when frying or baking, in addition to the loaf crushed in milk, add 1 egg or just the white to the minced meat. Salt to taste and season with your favorite spices.

    Knead the minced meat with your hands until smooth.

    And after all these preparations, start sculpting meat samples. The minced meat will come together better if you roll it well in your hands or throw it forcefully back into the bowl a couple of times, or lightly “juggle” it, throwing it from hand to hand (but only without fanaticism, since sharp throws are fraught with fatty meat splashes). Form the minced meat into a round cake.

    Leave the minced cake in your left hand (it’s more convenient) and place a tablespoon of filling in the center of the cake.

    Lightly press on the filling so that it “deepens” and the walls of the minced cake easily close together.
    Roll into an even cutlet, placing it seam side down if possible.

    Grease a baking dish or baking sheet with a small amount of vegetable oil and distribute the meat zrazy with the egg. Lightly grease them with vegetable oil on top too.

    Preheat the oven to 200 degrees and place the zrazy in it for 45-50 minutes. Serve with fresh vegetables or other suitable side dish.

Instead of baking in the oven, you can fry the zrazy in a frying pan with vegetable oil until golden brown. They are also very tasty, but in the oven they turn out to be more dietary.

I love weekends not because I don’t have to go to work, but because I don’t have to go to the shops and stock up on groceries on my way home from work. I’m probably one of those women who would rather give this sacred duty to their husbands than spend their precious time in queues. What would you make from it? Chops! Tasty and fast. Rolls? It’s also tasty, but not as quickly as I would like. Goulash? Not a bad option for lunch. But this is somehow ordinary, or something. A weekend dish should be tasty, beautiful, a little festive, and not bother your mother. Therefore, I suggest making meat zrazy with egg, hard cheese and green onions. You can use ready-made minced meat for them, but I made it myself using a food processor. Still, homemade minced meat, whatever one may say, is homemade minced meat. I began to notice that ready-made store-bought minced meat was very fatty. Either this is my nit-picking, or this is how things really are. Then the cutlets need to be evaporated for another half an hour, and from the soup, if I cook it with meatballs, constantly remove the circles of fat. Homemade minced meat turns out much tastier. To do this, I take a piece of pork, but always with lard (there should be a little fat) and grind it through a meat grinder.

Ingredients:

  • pork – 300 g,
  • eggs – 3 pcs. (1 will go into the minced meat, 2 will go into the filling),
  • hard cheese – 30 g,
  • green onions - a small bunch,
  • flour – 1 tablespoon,
  • salt or spices - to taste,
  • sunflower oil - for frying,
  • + water – 50 g

Cooking process:

This time I was too lazy to install a manual meat grinder, I still have it from Soviet times, then wash it, take out the knives, in the end I just cut the meat into pieces, threw it into the bowl of a food processor, and after 2 minutes I had the meat mass ready for immediate use. .


Next, I chopped the onion and swirled everything together for another minute.


Then she transferred the finished minced meat into a deep bowl, beat an egg into it and poured in flour.


By the way, I almost always put the latter in the cutlet mixture. It prevents the minced meat from becoming liquid and the cutlets, in this case, immediately, from spreading across the pan. I poured in the seasonings, stirred - that's it, one job done. Got busy with the filling. It didn't take much time because I boiled 2 eggs in advance. I got them from domestic chickens, which is why they are so tasty and yellow.

So, I put washed and finely chopped green onions in a separate bowl, and added finely grated cheese to it.


Next, I threw in the cooled and chopped eggs, added salt (a pinch is enough), and stirred.


I poured some oil into a cast iron frying pan, waited a couple of minutes for it to heat up, and began to form the zrazy. She took the minced meat with one hand, put it on the palm of her other hand, and spread it a little over the surface. Then she added the filling to the middle, pressing it in slightly, and with wet hands she rolled the fluffy meat cakes.


Fry them over medium heat on both sides.


I did this in order to give the zrazas a round shape. Then I put them in a mold, poured a little water into it and sent the dish to finish cooking in the oven at 180 degrees for 40 minutes.


I can’t tell you how delicious the zrazy turned out! If you are on a diet and you can’t eat anything fatty or fried, do not fry the dish, but immediately bake the zrazy in the oven.
